If you want this to have a pie crust, press the base right up to the edges of your dish. If you want a clean look, don’t press the base up at all.
- 1¼ cups mixed nuts
- ½ cup coconut (shredded/desiccated/flakes)
- ½ cup dried apricots
- ½ T coconut oil
- 1 avocado
- 2 cups soaked cashews (soaked overnight, or in boiling water for 1 hour)
- ½ cup coconut oil
- 3 kiwifruit
- ¾ cup lime juice

Process the ingredients in a food processor until the mixture stays in place and sticks together when you press it down and the nuts are finely chopped (this will take a while).
Press into a round dish (I used a 22cm springform pan).
Place in the freezer while you make the filling.
