This easy vegan mustard dressing recipe is the perfect dressing for any salad. I love it because it’s so quick and easy – it LITERALLY takes 1 minute! I love that even though it’s so quick and easy, it’s still a little fancier than your regular oil and vinegar dressing. You can use this vegan mustard dressing recipe on basically any salad! You could also drizzle it over steamed vegetables to give them a bit more flavour. I love to steam broccoli and zucchini and then drizzle a bit of this vegan mustard dressing recipe over the top! My favourite salad to use this vegan mustard dressing recipe with is my Simply Green Pasta Salad. They go so well together!

- 4 T olive oil
- 2 T apple cider vinegar (or lemon juice)
- 3 t seeded mustard
- ½ t mixed herbs
- Salt and pepper to taste
Optional: to spice this dressing up even more stir in any leftover dip you have in the fridge – hummus works really well! Tahini is another addition that just makes this dressing shine! Have a play and experiment with what you’ve got in the cupboard. You can make salad dressings so interesting and exciting with just a few extra ingredients!
